Its antiviral activity against viruses causing these diseases has been scientifically proven. Studies on this subject have shown that elderberry accelerates the healing process in the treatment of diseases such as influenza. 90% of the flu patients receiving elderberry syrup recovered at the end of 3 days, whereas only 25% of patients receiving placebo (cure medication) recovered after three days (Zakay-Rones, Z. 2004). Antioxidant and phenolic content found in commercial elderberry waters have been shown to be richer than other red fruits (Berrmidez-Soto and Tomas-Barberan2004). Elderberry is rich in fiber, calcium, phosphorus, vitamin B6 and vitamin A. This aspect is more valuable than other red fruits. There is a large amount of anthocyanins in the puree formed after the treatment of elderberry fruits. It is possible to evaluate these chemicals in various fields such as cosmetic industry, pharmacy, organic agriculture and fertilizer production (Seabra et al 2008). The most important studies on elderberry are investigating the supporting effects of AIDS and H1N1 (swine flu) in the treatment process. These studies have shown that elderberry significantly reduces cancer cells and has a preventive effect on swine flu (Barak et al. 2001; Konlee 1998).

In order to bring elderberry species into the economy, firstly the distribution areas of Kastamonu province and the biological and morphological characteristics of the elderberry plants grown in these areas due to their uncertainty in the number of elderberry species specified in the sources and, if any, different species and subspecies should be determined. After the determination of the relevant areas, it is necessary to determine the amount of plants present in these areas and the amount of organs such as flowers, fruits, leaves that can be obtained from these plants.
